The vinification

In 2000, under the direction of a world reknown oenologist, the wine plant of château du Petit Puch was completely rebuilt in search of top quality production.

Grapes are harvested plots per plots at the best ripeness level, avoiding over-ripeness which is prejudicable to flavours and aromas.

After a passage on our conveyor table, they are loaded in vats, respecting the typology of each plots ; it allows a good traceability and durable quality.

The Chateau du Petit Puch uses only small capacity stainless steel vats with thermo regulation to control a precisely the temperature during the alcoholic fermentation.

During the 4-5 first days of this fermentation, every morning & evening manual punchings allow a gentle extraction of the tannins, fruit and aroma of the grapes.

The aging

After the second fermentation, the malo-lactic, and one or several drawing off to eliminate the lees, the wine is put into barrels during winter in a 14th century building. This buidling is half-buried which allows constant temperature & hygrometry. The wine lives twelve months in High-Qualilty French-oak barrels, changed every three rolling years.

It incorporates the most advanced practices in wine making and are under very strict hygiene control. It is this chain of quality, managed by a very passionate team, which allows the production of this wine structured and smooth, well balanced, with aroma of ripe fruit, velvety and long in mouth, a real pleasure to enjoy.

For the cuvee "le Bordeaux", we favor the freshness, the roudness and the fruitiness for a wine to taste in its youth. So the vinification is only made in our stainless steel vat with a big attention during the vinification to get a qualitativ extraction of the colour and the flavors.

AOC : Graves de Vayres

Intense and complex nose of red & black fruits (cherry, blackcurrant) and a hint of spices. Full-bodied, dense and already round with plenty of fruits and a nice tannic structure.

Nice to drink now, once aerated, or keep.
